Baked lamb ribs with red wine and mint

In a mortar, mix 2 cloves of garlic with a little coarse salt, thyme sprigs and 1 sprig of rosemary, until a homogeneous paste results. Grease the ribs with the previously obtained emulsion and leave to marinate for at least 1 hour.

In a tray, place the carrot slices, then the rest of the rosemary, the lamb ribs and 2 cloves of garlic with the peel and sprinkle with wine and 30 ml of water.

Place in the preheated oven at 210 degrees Celsius for 30 minutes, turning them halfway. Leave to rest for another 10 minutes in the oven.

Boil the potatoes for 5 minutes in hot salted water.

Melt the butter in a pan and when it stops frothing, add the potatoes. Leave for 3-4 minutes on medium heat to sea, then turn and leave for a few more minutes.

Pour 20 ml of water into the pan and cover immediately. Leave for 4 minutes, shaking the pan from time to time.

Remove the pan from the heat, add the chopped garlic and rosemary, cover and let it infuse for 5-10 minutes.

Lamb ribs are garnished with fresh mint leaves and served with flavored potatoes.

Eastern Easter traditions and customs

The menu of the Easter meal is a bit simpler than at Christmas, and this is perhaps due to the spring greens, combined with fresh cheese, in various variants, already appeared in the markets. Of course we do not forget the painted or decorated eggs, depending on everyone's preference.

The feast of Easter, however, is full of symbols, some we still know, others we have forgotten. And the main symbols of the holiday are the Lamb and the Egg. The first is a symbol of sacrifice, the second of resurrection. The Lamb, synonymous with innocence and obedience, is seen as a sacrifice made every year in memory of the supreme sacrifice made by Jesus for mankind. This is the reason why we still eat Easter lamb and not only we do it.

At Easter, Greeks I celebrate with lamb, no matter what corner of the world they are in.
Preparations begin during Holy Week, when eggs are browned, traditional Easter bread is kneaded, tsoureki, which looks very much like our cake, and they prepare the special candles they give for Easter. The star of the meals is undoubtedly the lamb, cooked in the oven, over low heat, on a bed of aromatic herbs and olive oil. On the plate it will be accompanied by a mint sauce or fresh salad and, no doubt, with a glass of red wine.
There is also a soup in the traditional Easter menu "Magiritsa", made from lamb organs, with salad and dill, sometimes even with rice. It makes you think of the liquid form of our drob.

Our neighbours celebrate they celebrate Easter with the same intensity with which they celebrate life itself, and although their religious calendar is Julian, Easter is common to all Orthodox churches. Unlike Romania, where most people paint their eggs on Maundy Thursday or Easter Saturday, Serbs paint them on Good Friday. They are traditionally painted with the help of plants and wearing patterns printed from leaves. As in some of our villages, a reddish egg is kept over the year, usually near the icon on the wall.
On the holiday table, Serbs have lamb or beef, several kinds of green salads and many desserts. Their Easter bread (cozonac, pasca) is most often baked with red eggs in the middle.

Preparing for Easter in Ukraine it is the same as in the whole Orthodox world, and begins with fasting, so that on the feast day all the goodies from which Christians were deprived at that time may be laid on the table. Of course, the symbol food is not missing here either, and in the center of the table are the Easter Eggs. At the church, people bring a basket of food to be consecrated by the priests, and after eating with the family, Ukrainians usually visit their relatives and friends, exchanging gifts.

In the culinary tradition associated with the feast of Easter in Russia, there is Kulich (Easter bread, a kind of round cake, woven) Paskha (prepared in a pyramidal shape with symbolic inlays, made of fresh cheese, raisins and nuts, accompanied by a lighted candle) and eggs. And in Russia, the ritual egg has a pre-Christian history, symbolizing fertility and representing a form of protection.

The symbol of ritual Easter bread exists in many European countries (Easter bread, in Italy, & # 8211 Ősterkranz in Germany and Austria and paasstol, in the Netherlands), but the term Easter (Paska) for the sweet bread we know comes from the Greek and was used in the Byzantine Empire.
Easter is part of the Easter tradition in Ukraine, Russia, Belarus, Armenia, Romania, Moldova, Georgia and part of Bulgaria and as far as the Czech Republic and Slovenia. Immigrants from Eastern Europe took her with them to the USA, Canada and Great Britain, as a result she is now no stranger to Westerners either.
In Russia and Ukraine our Easter is called kulich, in the Czech Republic & # 8211 babobka, in Greece & # 8211 tsoureki and in Slovenia & # 8211 Potic.

Place the vegetables in a large roasting pan, place the lamb meat on top and bake for 45 minutes (sprinkle with marinade from time to time).
When it is well penetrated, wrap the meat in aluminum foil and let it rest on a plate in the oven off, with the oven door ajar.
Mix the sauce from the pan with the remaining marinade, put it on the fire and let it drop well (two thirds). Strain it, incorporate the butter cut into pieces and mix them with the whisk, adding, at the end, a little lemon juice.
Serve the lamb leg immediately, with the sauce next to it and a suitable garnish.

Baked lamb ribs with red wine sauce

and put in the preheated oven at 200 degrees for 45 minutes-1 hour.

Separately, prepare the sauce: the wine

together with the butter, the sprig of rosemary,

onion cut into 4, finely chopped garlic

Boil until it drops to 2/3 of the initial amount.

Dissolve the starch with a little cold water

and add over the wine sauce. Bring to the boil until thickened.

Pass through a sieve to remove onions and spices

The ribs are served with this red wine sauce.
