Flash-Grilled Chicken Breasts with Orange-Maple Syrup Sauce

To make the sauce, combine the orange juice, orange zest, and maple syrup in a bowl. Stir until well blended and reserve for later.

Brush each breast with the olive oil, followed by the thyme leaves, and salt and pepper, to taste. Put the chicken into a gallon-sized Ziploc freezer bags, press the air out, and seal it. Place on a cutting board and roll a rolling pin over the chicken to flatten to about a ½-inch thickness.

Fill a charcoal chimney with briquettes, set the chimney on the bottom grill grate, and light. When the coals are ready, dump them into the bottom of the grill and spread evenly. For a gas grill, preheat on medium-high heat.

Grill the chicken for 2 minutes; turn over and grill for 2 more minutes. Before turning again, brush the top side with three-fourths of the orange-maple syrup sauce, flip, and then brush the other side and grill for 2 more minutes.

To test for doneness, cut into the thickest part or test with a meat thermometer (160 degrees for done, as the temperature will rise 5 degrees after the chicken is removed from the grill). If the chicken is pink or underdone, brush with more finishing sauce and grill for 1 more minute on each side. When done, remove the chicken from the grill to a cutting board. Cut lengthwise into ½-inch strips and serve immediately with the rest of the sauce. Garnish with orange slices.

We have strict biosecurity protocols throughout our farms and entire supply chain, including proven sanitation methods which minimize the risk of contaminated surfaces.

Perdue Farms Takes Food Safety Protocols Seriously

We have the highest standards of biosecurity and food safety, and fully sanitize our facilities every 24 hours. We are closely monitoring affected areas and reiterating our biosecurity policy to help minimize the potential to transport possibly contaminated surfaces. The staff at the onsite Wellness Centers at 19 of our facilities are trained on how to protect our associates from, and identify and respond to, symptoms of COVID-19. These professionals follow standard operating procedures as defined by the CDC for infectious diseases. The Wellness Centers are available to all associates and their families. We are taking every precaution to protect our associates, communities, customers and business partners, and ensure the continuity of our business.

All of our animals are born/hatched, raised, harvested and processed in the U.S. As with most large businesses, we source some (non-food) elements of our supply chain from countries outside the U.S. We are closely monitoring affected areas and reiterating our biosecurity policy to help minimize the potential to transport possibly contaminated surfaces.

Maple-Curry Chicken from the book Yum and Yummer

1/4 cup grainy dijon mustard

1 tbsp reduced-sodium soy sauce

1/2 tsp each ground cumin, chili powder and freshly ground pepper

1/4 tsp each sea salt and cayenne pepper

*You can take the skin off or leave it on. It’s up to you!

In a large bowl, whisk together all marinade ingredients until well blended. Add chicken pieces an turn to coat evenly with marinade. Cover with plastic wrap and refrigerate for at least 2 hours or up to 24 hours.

Preheat oven to 375F. Arrange chicken pieces in a single layer on a large, rimmed baking sheet (line with parchment paper for easier clean-up). Drizzle extra marinade over each piece. Bake in preheated oven for 40 to 45 minutes or until chicken is cooked through. Serve hot.

This baked maple glazed chicken is made with only 7 ingredients which makes it a simple delicious dinner idea! Tender chicken glazed with the rich sweetness of pure maple syrup paired with tart lemon and nutty almonds combine to make the flavors out of this world! Pair with steamed rice and a kale salad for a complete meal.


  • 4 boneless, skinless chicken breasts
  • ½ cup pure maple syrup
  • ½ cup butter, melted
  • ½ cup slivered almonds
  • 1 Tablespoon fresh lemon juice
  • 1 teaspoon grated lemon rind
  • ½ teaspoon salt
  • cracked black pepper


  1. Place your chicken breasts in the bottom of a shallow baking pan. Mix all remaining ingredients and pour the sauce over top of the chicken.
  2. Bake the chicken for 35 &ndash 45 minutes, basting at least twice during cooking. When the internal temperature of the breast reaches 160 degrees, remove the pan from the oven.
  3. Cover the pan with foil, and let the chicken rest for 5 minutes. Serve the chicken over top of rice or butter noodles and garnish

Maple Rosemary Grilled Chicken

Truly the best grilled chicken ever! It’s wonderfully sweet and savory with just so much flavor with the simplest marinade!


  • 1/2 cup maple syrup
  • 1/4 cup reduced sodium soy sauce
  • 3 tablespoons olive oil, divided
  • 1 shallot, minced
  • 2 tablespoons chopped fresh rosemary
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon Dijon
  • 3 cloves garlic, minced
  • Kosher salt and fresh ground black pepper, to taste
  • 6 boneless, skinless chicken breasts
  • 2 sprigs fresh rosemary


  1. In a small bowl, combine maple syrup, soy sauce, 2 tablespoons olive oil, shallot, rosemary, lemon juice, Dijon and garlic season with salt and pepper, to taste.
  2. In a gallon size Ziploc bag, combine maple syrup mixture and chicken marinate for at least 30 minutes to overnight, turning the bag occasionally. Drain the chicken from the marinade, discarding the marinade.
  3. Preheat grill to medium high heat.
  4. Brush chicken with remaining 1 tablespoon olive oil season with salt and pepper, to taste. Add chicken to grill, and cook, turning occasionally, until chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 10 minutes.
  5. Serve immediately, garnished with rosemary, if desired.

  • 2 tablespoons pure maple syrup
  • 1 tablespoon soy sauce (reduced-sodium)
  • 1 tablespoon lemon juice, fresh-squeezed (approximately 1 lemon)
  • 1 clove garlic, minced
  • 1 teaspoon ginger, minced
  • 1/4 teaspoon black pepper, freshly ground
  • 2 chicken breasts, boneless and skinless or 2 chicken breasts with ribs

In a large resealable plastic bag, combine maple syrup, soy sauce, lemon juice, garlic, ginger, and pepper. Place the chicken breasts in the bag and turn to coat with the marinade. Seal the bag and refrigerate chicken for 2 hours, turning several times.

Cooking Techniques:

Oven: Preheat oven to 375 degrees F. Remove chicken from the marinade (reserving the marinade - see below), and place on a baking pan cook approximately 20 to 30 minutes or until a meat thermometer registers an internal temperature of 165 degrees F. (juices will run clear when cut with the tip of a knife)

Barbecue: Preheat barbecue grill (spray grill with vegetable-oil cooking spray). Remove chicken from the marinade (reserving the marinade), and place chicken onto hot grill and brush with balsamic vinegar glaze. Cover barbecue with lid, open any vents, and cook 20 to 30 minutes or until a meat thermometer registers an internal temperature of 165 degrees F. (juices will run clear when cut with the tip of a knife).

Pour the reserved marinade into a small saucepan an bring to a simmer over medium heat. Let the mixture cook until it reduces by half, approximately 4 to 5 minutes remove from heat. Pour the marinade over the tops of the cooked chicken before serving.

Zesty Italian Sausage Pasta


1 small sweet onion, thinly sliced

1 can (14.5 oz.) Italian tomatoes, diced

1 can (10.5 oz.) chicken broth

1. Prepare sausage according to directions. Cool slightly cut into ¼-in. slices.

2. Prepare pasta according to package directions.

3. In a large saucepan, sauté the onion and garlic in olive oil until tender.

4. Stir in tomatoes and chicken broth. Bring to a simmer.

5. Add the broccoli and cooked pasta.

Cook until broccoli is tender, about 5 minutes. Add sausage toss to combine.

Recipe Summary

Bring orange juice and wine to a boil in a small saucepan. Reduce heat slightly, but keep high enough to continue a low boil for 5 minutes, stirring occasionally. Stir in maple syrup and continue boiling for another 5 to 6 minutes, stirring frequently, until glossy and just slightly thickened. Set aside.

In a small bowl mix together the rosemary, salt and pepper. Rub mixture on both sides of chicken breasts, and set aside.

Melt butter and olive oil in a large skillet over medium high heat. Add chicken breasts, cover skillet and saute for about 5 minutes on each side until lightly browned. Pour orange-maple mixture over chicken (mixture will boil and bubble). Reduce heat to simmer cover and let cook for another 10 minutes, basting occasionally, until chicken is cooked through and sauce has turned into a rich, thick glaze.
