Dessert cake with semolina, fasting

First of all we need a tray on which we put baking paper. I used a 15 x 20 cm tray and preheated the oven to 180 degrees C.

We mix the sugar and the vanilla sugar with carbonated water until it melts. Dry ingredients: semolina, flour, baking powder we mix them separately in a bowl. Add them over water with sugar and oil and mix.

I added in the composition: finely chopped candied orange peel, coarsely chopped walnuts, chopped dates and some pitted cherries from the compote.

Homogenize everything and pour into the pan.

Put the tray in the hot oven at 180 degrees C, until the cake starts to crack and come off the edges. Of course we also do the toothpick test before taking it out of the oven, if the toothpick comes out clean, our cake is ready. It takes about 30 minutes to be ready.

We prepare the syrup as follows: we heat the water and mix the honey in it.

Pour while it is still hot over the cake in the pan (and it must be hot) and let it absorb all the syrup.
